What's in an EverFree cookie, ingredient by ingredient

Every ingredient in an EverFree gluten-free cookie, in pack order: what it is, why it is there, and what we leave out.

Every EverFree cookie has the same short base, plus one or two flavour ingredients. Here is what each one is and why it is there, in the order it appears on the pack.

Ingredients on a UK label are listed by weight, largest first. This is the ingredients list for our five sweet cookies: Pistachio & Cocoa, Hazelnut, Lemon & Ginger, Orange and Cinnamon.

The base

Corn starch

The largest ingredient. Wheat flour is the backbone of an ordinary biscuit; without gluten, a mix of starches and flours has to do that job instead. Corn starch gives the cookie its light, crisp structure.

Sugar

The second ingredient, for sweetness and colour as the cookies bake. Our savoury biscuits have no sugar in the ingredients list.

Rice flour, chickpea flour and corn flour

Three naturally gluten-free flours. Rice flour keeps the texture fine. Chickpea flour adds body and a slightly nutty, savoury depth. Corn flour adds a little colour and crunch.

Vegetable fibre (carrot and psyllium)

Fibre from carrot and from psyllium husk. In gluten-free baking, fibre helps the dough hold moisture and bind together. It is also why every EverFree cookie is a source of fibre: 4 g per 100 g.

Sunflower oil

The only fat in the sweet cookies. No butter, so the cookies are dairy-free, and no palm oil.

Guar gum and xanthan gum (stabilisers)

Gluten is what makes a wheat dough stretch and hold its shape. Guar gum, from the guar bean, and xanthan gum, made by fermentation, do part of that job in a gluten-free dough. They are additives and are labelled as stabilisers.

Sunflower lecithin (emulsifier)

Lecithin helps the oil and the other ingredients mix evenly. Ours comes from sunflowers, not soy, and there is no soy in any EverFree product.

Raising agents (sodium carbonates, diphosphates)

Sodium carbonates include bicarbonate of soda. Together with diphosphates, they release gas in the oven so the cookies rise and turn light rather than dense. They are additives, and we name them on the pack.

Natural vanilla flavouring

A small amount, for a rounded sweetness behind the main flavour.

The flavours

Each flavour ingredient is printed on the pack with its percentage.

What we leave out

  • No gluten-containing ingredients: no wheat, rye, barley or oats.
  • No milk or eggs in the sweet cookies, which are vegan.
  • No soy, and no palm oil.
  • No artificial colours or preservatives.

Allergens

Pistachio & Cocoa contains pistachio and Hazelnut contains hazelnut. Lemon & Ginger, Orange and Cinnamon have no nut ingredients. All our products are made in a facility that handles nuts.

Our two savoury biscuits, Cheese & Onion and Dill & Cheese, use the same base without the sugar and vanilla, with salt and cottage cheese added. They contain milk, so they are vegetarian but not vegan.
