EverFree Gluten-Free Cake Mix 300g - Pack of 3

One bag makes a loaf cake or 12 muffins (methods below). Serve plain, or add your own icing or filling; check any toppings are gluten-free, and dairy-free for a vegan bake.

Loaf cake - you will need

• 1 pack (300 g / 10.5 oz) EverFree Cake Mix
• 130 ml / 4 fl oz oil
• 3 medium eggs (for a vegan cake: replace the eggs with 150 ml plant-based milk - do not add water)

Preparation instructions

1. Mix all ingredients until smooth.
2. Pour into a loaf tin.
3. Bake at 160°C fan for 50-60 minutes, or until golden and a skewer inserted comes out clean.
4. For conventional ovens: bake at 170°C for 50-60 minutes.
5. Allow to cool before serving.

Muffins - you will need

The same ingredients as the loaf cake: 1 pack (300 g) EverFree Cake Mix, 130 ml / 4 fl oz oil and 3 medium eggs (for vegan muffins: replace the eggs with 150 ml plant-based milk - do not add water).

1. Divide the batter into 12 muffin cases, filling each one with approximately 50-55 g.
2. Bake at 160°C fan for 30-40 minutes, or until golden and a skewer inserted comes out clean.
3. For conventional ovens: bake at 170°C for 30-35 minutes.
4. Allow to cool before serving.

Store in a cool, dry place. Do not expose to direct sunlight. Best before: see pack.

Is it suitable for coeliacs?
Yes. The mix is gluten-free and suitable for coeliacs. If you add other ingredients or toppings, check that they are gluten-free too.

Is it vegan?
The mix is vegan as sold. The method uses eggs, with a vegan alternative using plant-based milk (see Method).

Does it contain nuts?
Nuts are not an ingredient, but the mix is made in a facility that handles nuts.
