One bag of EverFree Gluten-Free Cookie Mix makes 15 cookies. Here is the base method, plus five ways to change it.

The base method

This is the method printed on the pack. Where this page says "see pack", follow the quantity on your bag.

You will need

  • 1 pack (350 g / 12.3 oz) EverFree Cookie Mix
  • Butter and/or oil: see pack for the quantities
  • 1 egg (size: see pack). Vegan alternative to the egg: see pack
  • Optional: your choice of additions, such as chocolate chips, nuts, fruit or spices. Check they are gluten-free, and dairy-free for vegan cookies

Preparation instructions

  1. Preheat your oven to fan 150°C / Gas Mark 4 (conventional oven temperature: see pack). Line a baking tray with parchment.
  2. Mix the cookie mix with the butter, oil and egg until a smooth dough forms.
  3. Shape the dough into 15 even balls, place them on the tray and flatten slightly.
  4. Bake until the edges are golden (baking time: see pack). Let cool completely before enjoying.

Five variations

Stir one of these into the dough at step 2. Start with a little and adjust to taste.

  1. Orange zest: the finely grated zest of an orange.
  2. Cinnamon: a pinch of ground cinnamon.
  3. Chopped pistachio: a handful of chopped pistachios. This adds nuts, so these cookies contain pistachio. If you like pistachio, try our ready-made Pistachio & Cocoa cookies.
  4. Dark chocolate: chopped dark chocolate or chocolate chips. Check the chocolate is gluten-free, and dairy-free if you are baking for vegans.
  5. Dried fruit: raisins or chopped dried cranberries. Check the label, as some dried fruit is coated in flour.

Egg and vegan versions

The mix is vegan as sold. The pack method uses an egg; follow the vegan alternative printed on your pack, and use dairy-free additions.

A note on allergens

EverFree mixes are gluten-free and suitable for coeliacs. They contain no nut ingredients, but they are made in a facility that handles nuts. Anything you add, such as toppings, chocolate or fillings, needs checking too: make sure it is gluten-free, and dairy-free if you are baking for vegans.
